An essential side to an Indian meal, a raita is made almost every
day in our home. Sometimes it's a thick bundi raita, tomato and cucumber
one or just a plain jeera raita. However a rich Mughlai meal needs
something else... Something fresh, fruity and a little sweet... a fruit raita
made with one of our favourite fruit pineapple! It's sweet and tangy and
pairs perfectly with the richness of Mughlai / Punjabi dishes. I used
canned pineapple (in its own juice) because of its consistent and sweet
pineapple slices.
Ingredients:
2 cups yogurt
4-5 slices canned pineapple
2 teaspoons powdered sugar
Water / pineapple juice (if needed)
1/2 teaspoon roasted cumin (bhuna jeera)
Salt
Chop the pineapple into small pieces. Whisk the yogurt to
make it smooth and lump free. If its very thick, add a little water or
pineapple juice. Mix the salt, sugar, cumin in the yogurt. Add the pineapple
pieces. Stir to combine and refrigerate to chill.
Serve cold!
