Gujarati Thali


Hope you all had a Happy Diwali and wish you a Happy, Healthy and Prosperous New Year. 

After Diwali comes bhaibeej (bhaiya dooj). On this day the sister cooks a special meal for her brother. Now what can be more special than a thali? I had made this Gujarati thali on Bhaibeej. 

The traditional components of this thali would be 

A type of Bread 
Rice preparation
Two sabzi's, one dry and one with gravy
One beans dish
Daal or Kadhi
Two desserts
One farsan (hot savoury snack)
Chutneys
Salad
Accompaniments

There is one rule to daal and kadhi combination with the thali. If your dessert is a laddoo or churma, you have daal. If its any milk based dessert like basundi or doodhpak you make kadhi with it. 

Every meal ends with mukhvaas (mouth fresheners). This can be saunf (fennel seeds), jeera goli (cumin seed powdered and mixed with spices) or paan (betel leaf with stuffings). 

During summers another must have is chaas (buttermilk). No meal is complete without it.

Tomato and cucumber kachumber
Methi ringna nu shaak
Kadhi
Sev tameta nu shaak
Kala Chana
Sitaphal basundi (Serve cold)
Kaju Katli
Poori
Dhokla
Green chutney
Mango pickle
Steamed rice
Papad
