Gujarati Special Recipe 6: Dhabawala Magaj na Laadoo (Besan laddoo)


Golden orbs of sweet flour speckled with crunchy red dots, this is a special winter treat. The laddoos are melt in the mouth and red ghee dots just add a textural element to every bite. The red dots give the laddoos the name dhabawala, you can make them plain but once you have tasted these there's no going back to the plain ones.


Ingredients:



250 grams gram flour, besan (2 cups)
200 grams ghee (clarified butter) (3/4 cup + 2 tablespoons)
2 tablespoons milk
3/4 cup powdered sugar
1/2 teaspoon cardamom powder



Take the flour in a large plate. Sprinkle the flour with the milk and 2 tablespoons of ghee and rub between your palms. It will give a slight grainy / sandy texture.



Heat the remaining ghee in a wok and add the flour to it. Sauté on low heat till the flour becomes darker in colour and the ghee starts to separate a little. Remove from heat. 
Add cardamom and powdered sugar and mix well. Let the mixture cool a little and make balls out of it. These stay fresh stored in an airtight container upto 15 days.
