Paneer Paranthas

Nothing says good morning like piping hot paneer paranthas. It's the prefect breakfast, high in protein, filling and oh-so-tasty!

Ingredients:

3/4 cup paneer, grated
1 medium onion, finely chopped
1 tablespoon coriander, finely chopped
1 green chilli, very finely diced
1/2 teaspoon ginger, grated
1/2 teaspoon chilli powder (optional)
1/4 teaspoon turmeric powder (optional)
1 cup roti dough
1/2 cup wheat flour (for rolling Paranthas)
Grated cheese for garnish (optional)
Salt

Mix the paneer, onion, coriander, chili, ginger and spices. 
Roll out a 3-4 mm thick 4 inch diameter roti. Put 1 tablespoon filling in the middle of the roti. Fold in the sides to cover the filling. Seal well. Turn the filled roti, dip both sides in flour and roll out. Roll as thin as you can without tearing the parantha. 
Heat a non-stick tava. Put it on low heat and put the parantha on. After 10-15 seconds, flip the parantha and raise the heat to medium-high. Apply oil around the sides and on the surface. Press down with spatula to cook evenly. Flip again, apply oil as needed, press down with spatula and cook till a few brown spots appear on both sides. 

Serve hot with chutney, ketchup or achaar! And a hot cup of tea...
