Holidays need a decadent breakfast, whats better than chocolate? We love strawberries too, so they are served as this luscious and thick compote.
As these were for a breakfast,they are a little less chocolaty and less sweet. If you are making it for dessert (topped with ice-cream and caramel drizzle) double the cocoa powder and sugar along with an additional tablespoon of milk.
Ingredients for Waffles:
1 cup whole wheat flour
1 tablespoon cocoa powder
1 tablespoon chocolate chips
1 tablespoon brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 tablespoon melted butter
1 teaspoon vanilla
1 large egg
1 cup milk
Butter to grease the waffle iron
Take 1/2 tablespoon flour aside and roll the chips in it.
In a bowl, take the remaining flour, cocoa, baking powder, baking soda and mix well. In another bowl, take the egg and whisk well. Next add the butter, sugar, vanilla and milk. Into this mix add the flour mix and whisk till incorporated. Now fold in the chocolate chips.
Heat the waffle iron, apply some butter and pour the batter as per the size of the waffle iron. Cook the waffles as per instructions. When done they will be puffed up, crisp and will come off the iron easily. Serve immediately or keep them warm in a preheated oven at 100 deg C.
Ingredients for the compote:
1/2 tablespoon butter
1 tablespoon sugar (The berries were super sweet hence the reduced sugar)
To make the compote, hull and halve the strawberries. Heat butter in a pot and add the berries. Add sugar to it. Mash the berries slightly to start the cooking process. Cook for approximately 10 minutes. The sugar and strawberries combine to make a thick almost jam like compote. Set aside to cool.
Top the warm waffles with the compote and serve!
