How to incorporate ragi into a toddlers diet? And in a way that the toddler enjoys it? The answer was this double chocolate chip cookie. The cocoa powder hides the color and flavor of ragi and the chocolate chips make the cookie irresistible! Ragi is a good natural source of protein, amino acids and minerals like Calcium, Iron, Niacin, Thiamin and Riboflavin.
Ingredients:
3/4 cup Ragi flour
1/4 cup Cocao powder
1/3 cup Wheat flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup Chocolate chips + 1 tablespoon chips
1/2 cup (100 grams) Butter
1/2 cup sugar (measured then powdered)
1 egg
1 teaspoon Vanilla
Mix the first five dry ingredients together very well. In another bowl take the room temperature butter and add the sugar into it. Whisk it till it is pale and fluffy. Add the egg and vanilla and beat again till its all mixed and some air is incorporated into it. Keeping aside 1 teaspoon, add the remaining dry mix into the butter and make a uniform cookie dough. Toss the chocolate chips in the flour and then fold into the cookie dough.
Chill the dough for at least half an hour.
Preheat the oven to 180 deg C or 350 deg F
Make 1 inch balls of dough and bake for 10-12 minutes or till the bottom of the cookie becomes dark.
This dough makes about 20 cookies.
