Flourless Cocao Almond Oatmeal Muffins

Moist, chocolaty, and cute! Here's another attempt to add protein to one of the favorite foods of my little one. I have used almond meal and oats for protein and fibre. Once made these taste no different than any other cocoa muffins. Try these today...

Ingredients:

1 1/2 cups quick cooking oats
1 1/4 cups almond meal / almond flour
1/4 cup Cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup sour milk 
2 eggs
1/3 cup butter or vegetable oil 
3/4 cup brown sugar
1 teaspoon vanilla 
1 teaspoon salt 
1 teaspoon instant coffee powder 

Grind the oats into a powder. Soak the ground oatmeal with the sour milk for 20 minutes. 

Preheat an oven to 180 deg C
In a bowl mix the almond meal, cocao powder, baking powder and baking soda. 

In the oats mixture, add the eggs, butter, sugar, salt and vanilla and mix till thoroughly incorporated. Take a tablespoon of this mixture and add the coffee into it. Mix well till the coffee granules are completely dissolved. Mix this with the rest of the wet mixture. 

Now add the dry ingredients into the wet ones and whisk till it becomes a smooth batter. 

Line mini muffin tins with a liner and fill till 3/4th full. Bake for 10 to 11 minutes till a toothpick inserted in the center comes out clean. Makes 36 mini muffins or 12 regular ones. 

Serve these to your kids, warm or cold with a glass of milk!
