Noodles are a favorite with my husband and this is a one dish meal. Instead of making stir-fry vegetables with tofu and noodles separate, I just combined the two. And I love sauces and I used every one in the house for this one :) The stir-fry and teriyaki sauce give it sweetness, vinegar gives it a tang and hot sauce makes it spicy. I like tomato flavor and ketchup finds its way in. For vegetables, I bought a frozen stir fry mix as it is easier to prep and cook than fresh vegetables. Also some ingredients are only available in larger quantities and sometimes I cant finish them off. This serves 2 people as a individual dish and 4 people if combined with other dishes.
Ingredients:
1 pack (6 oz) chow mein Stir fry noodles (or hakka noodles)
10-12 pieces (7 oz) tofu
2 cups mixed vegetables (I used broccoli, carrots, sugar snap peas, water chestnuts, baby corn, red peppers, mushrooms, onions and bamboo shoots)
1 tablespoon soy sauce
1 tablespoon teriyaki sauce
1 tablespoon stir-fry sauce
1 tablespoon ketchup
1 teaspoon hot sauce (I used Sriracha)
1 teaspoon red pepper flakes
1 teaspoon vinegar
2 cloves garlic minced
1 inch ginger knob minced
2 spring onions chopped along with greens
3 tablespoons and 1 teaspoon oil
1/2 teaspoon black pepper
Salt
In a large pot boil water and cook the noodles as specified on the pack. Drain the noodles and wash them to remove the extra starch. Oil them (1 teaspoon) to keep them separate.
Drain the tofu and dry it well. Cut it into cubes. In a non-stick wok or large frying pan, take half (1 1/2 tablespoons) the oil and fry the tofu pieces one side at a time. Take care as the tofu may cause the oil to splutter. Set it aside.
In the same pan add the remaining oil and add the ginger, garlic and the onions. Saute for a minute and add the vegetables. Saute for a couple of minutes till they thaw. Add all the sauces along with the red pepper flakes, black pepper, vinegar and ketchup. Saute for a minute till the vegetables cook. Add the tofu and toss to coat. Then add the noodles. Mix with the vegetables and serve hot!
