Punjabi Kadhi with Pakoras

This is a definite perk of marrying a Punjabi - regularly gorging on their delicious kadhi chawal. Though in my house this ranks below rajma chawal, I never the less love the golden thick kadhi with crispy pakoras. The tempering on the top is a striking red against the yellow, the fragrant ghee with spices, you have to taste it to believe it. 

Ingredients:

For Kadhi

2 cups Curd, slightly sour
2 cups Water
4 tablespoons Gram flour, besan
1 teaspoon Punjabi Garam masala
1/2 teaspoon fenugreek seeeds
1 Green chili
1/2 teaspoon turmeric
Big pinch Kasuri Methi
Salt

For the pakoras
2 medium Onions, sliced thin
1 cup Gram flour
2 teaspoons Chili powder
2 teaspoons Cumin-coriander powder (dhania - jeera)
1 teaspoon Turmeric powder
1 teaspoon Carrom seeds (ajwain)
Salt 
Oil for frying

For the tempering

2 tablespoons Ghee
2 teaspoons Cumin seeds
1 teaspoon fennel seeds
1/2 teaspoon fenugreek seeds
1 teaspoon Chili powder

Add the salt and spices to the onions and mix well. Keep it for 10 minutes till the onions sweat. Now add the gram flour and add enough water to make a pakora batter. Heat oil in a wok and when it oil is hot, add spoonfuls of the batter. Cook on medium heat till it is golden in colour.

In a deep wok or a wide saucepan, whisk together the curd, water, turmeric and gram flour. Put it on low heat and bring it to a boil whisking continuously. Add the green chili and fenugreek seeds and keep cooking the kadhi for about 10-15 minutes. In the last two minutes add the kasuri methi, garam masala and the pakoras. Take it of the heat and put it in a serving bowl.

Heat the ghee in a tempering pan and when hot add the cumin, fennel and fenugreek seeds. Take it off the heat when they begin to crackle. When it cools a little add the chili powder. Adding chili to hot ghee will make it brown.

Pour the tempering over the kadhi and enjoy with hot rice!
