I love mini desserts and I have drooled over mini tarts on Pinterest for long. This no-bake one was perfect for a little girls birthday party I was catering. Oreo cookies are her favorites and this dessert combines Oreo's and blueberries perfectly. You can use strawberry, raspberry or cherry filling as well.
Ingredients:
300 grams Oreos
100 grams unsalted Butter
3/4th cup whipping cream*
1 teaspoon gelatin
1/2 cup blueberry filling
Crush the Oreo's in a food processor or put them in a ziplock bag and crush with a rolling pin till it is very fine crumbs, almost powdery in texture. Add melted butter to it and press them into mini tart moulds. Put them in the refrigerator to firm up while we prepare the blueberry cream.
Blend your blueberry filling to make it a smooth puree. Chill while the cream is whipping.
In a chilled bowl, take the whipping cream and whip on medium till it starts increasing in volume. Take the gelatin in a cup and add 2 tablespoons water in it. In another vessel heat about 3 tablespoons of water and bring to a boil. When the gelatin has bloomed, add the boiling water and stir till the gelatin dissolves. Now add the gelatin to the whipping cream and continue beating. If the cream has become warmer, put it in the freezer for 10 minutes. Continue whipping on high speed till firm peaks form. Tilt the bowl towards you and if the cream does not move, it is properly whipped.
Fold the blueberry filling into the whipped cream till well incorporated. To remove the tarts from the moulds, insert a toothpick in the side of the mould and pry the tart out.
Use a star tip to pipe the cream on the tarts. Keep the tarts refrigerated. Remove them from the fridge 15 minutes before serving.

*I had used a sweetened non-dairy whipping cream so I didn't add any additional sugar. If using unsweetened cream add 2 tablespoons icing sugar.
