This must be the most beloved soup on earth! Having tomato as the base, this soup also opens up to many interesting and tasty variations. Here is a simple soup with an Indian spice base.
Ingredients:
1 kilo tomatoes
1 teaspoon butter
1/4 teaspoon cumin seeds
2 cloves
1 piece cinnamon
Salt
Black pepper
Remove the stem and core from the tomatoes, cut into half and put them in a pressure cooker along with 2 cups of water. Pressure cook to one whistle. Blend the tomatoes with a hand blender. You can strain this if want a clearer soup. Keep aside.
Heat a deep saucepan add the butter. Next add the cumin seeds, cloves and cinnamon. Now add the tomato soup. Add additional water if required for the soup consistency you like. Add salt and black pepper to taste. Taste and adjust seasoning. Bring to a boil. Serve hot!
Add croutons for garnish or add a side of grilled cheese sandwiches to make it a yummy meal!
