Caramelized Onion and Goat Cheese Pizza


New year and new recipes. I wanted to start by posting one of my favorite foods of all time - Pizza. This is a variation on the standard pizza but even more tasty. White pizza with caramelized onion and goat cheese. I like the sweetness of the caramelized onion with the tartness of goat cheese. There are many ways of making this combination but I like it without any other toppings or sauces. This lets me taste just the onion and cheese with the flavor of the crust. I made a basic pizza dough from this recipe, but I made a half batch.

Ingredients:

3 large onions
3-4 oz goat cheese
1 ball of pizza dough
1.5 tablespoons oil

Heat the oil in a large pan. Chop the onions in long slices. Add the onions to the pan, and cook on medium heat stirring occasionally. The caramelization process takes about 45-50 minutes and the onions will go from translucent to a light brown. Preheat the oven to 450 degrees. Roll out the dough to make a 12 inch pizza base. Blind bake for 10 minutes. You do not need to do this if you have a pizza stone. Remove base from oven and spread the onions on the pizza along with crumbled goat cheese. Bake for 15 minutes till the cheese starts browning. Rest for a minute and serve piping hot.

  4. I love fried goat cheese balls topped with caramelized onions-its such a standard tapas fixture, it's cool that you topped it on your pizza!
