Happy New Year everyone!
And what better way to start the new year than with chocolate and whiskey. I was looking for an easy Christmas cookie and after following one link to another I found these and I knew I had to make this. It sounded simple and as there was no precise measuring, I knew I couldn't go very wrong. I have burned cookies and eaten them raw, so the no cook sounded good. I made this with Nilla vanilla wafers and added cocoa powder but it can be made with chocolate wafers as well. I added more whiskey than needed but hey it was for a party. I tasted it with the addition of every ingredient and so these are approximate measurements. I made them 1 day in advance for the flavors to mingle. This proportion made about 18 balls.

Ingredients:
1/2 box Nabisco Nilla wafers
4 tablespoons unsweetened cocoa powder
2 tablespoons sugar
3 tablespoons light corn syrup
1/4 cup whiskey or rum
1/2 cup walnuts pieces
Powdered sugar for garnish (optional)
In a food processor, finely grind the nilla wafers. It should be about 2 cups. Add the cocoa and sugar and taste for sweetness. If you like it sweeter add some more sugar. Heat a pan and toast the walnuts. Cool and add to the wafer, cocoa mixture. Add all the whiskey and corn syrup one tablespoon at a time. Mix to combine. Keep adding the corn syrup till the mixture when pressed forms into a ball. Shape the mixture into 1 inch balls. Take the powdered sugar in a bowl and roll the balls to coat. I tried cocoa as well but as it was unsweetened, it was a bitter note on the first bite - I will avoid that in the future. I did keep most of them un-coated for the party. Keep refrigerated and serve at room temperature in mini muffin wrappers.
