Chocolate bark is easy, fast and fun. And this Diwali I am planning to do just that, cook food that is easy and fast to cook and fun to make! Its a combination of salty, sweet and slightly tart on the chocolate. This recipe is Ina Gartens and its perfect! But you can change the cashews to almonds if you so prefer.
Ingredients:
1 cup dark chocolate
1 cup milk chocolate
1 cup whole roasted salted cashews*
1 cup chopped (diced) dried apricots
1/2 cup dried cranberries, chopped into half
Melt the chocolate on a double boiler. Heat a saucepan of water and keep a larger bowl on it. Chop the chocolate into chunks. On a gentle heat, melt the chocolate. Stir occasionally while melting.When you remove the chocolate from the heat, wipe the bottom of the bowl so the water does not come in contact with the chocolate.
Spread the chocolate on a silicon mat or parchment paper about 5 mm thick. When slightly cooled spread the cashews, apricots and cranberries on it. Press down slightly so it adheres to the chocolate. Put in the refrigerator for a few minutes to harden. Cut into large squares or break into shards as you like.
Enjoy these with friends and family. They make an excellent gift as well.
